Feeling in the spirit of the “pumpkin season” lately and although I have to admit I do not personally love all things pumpkin, I thought it would be fun to make some yummy snacks with this fruit/vegetable. Energy balls are a hit at our house because they are quick, easy snacks (or meals sometimes) that provide fuel for all of our busy, growing bodies. Knowing exactly what all the ingredients are in them makes mama happy.
Easy, simple ingredients that satisfy a sweet tooth yet are still healthy (as with anything, moderation is key).
Pumpkin Spice Balls
Makes 18-20 small balls
Ingredients
- 1 cup cashew butter (may substitute any nut or seed butter)
- 2 TBLS pumpkin puree
- 1 TBLS pumpkin pie spice*
- 3 TBLS coconut flour (do not substitute another flour for this)
- 2 TBLS maple syrup (can substitute another sweetener of choice)
Method:
- Combine cashew butter and pumpkin puree in a large mixing bowl.
- Add pumpkin pie spice, coconut flour and maple syrup. Mix well until the batter is very thick.
- Using your hands, form small balls, about the size of a dime and place on a plate.
- Refrigerate until firm and keep that way until ready to serve. Can be frozen as well.
Enjoy these seasonal, bite-sized delights that are full of protein and healthy fats. They are also vegan and can be made keto-friendly. My kids enjoyed helping make them and literally couldn’t keep their hands off!
Things to consider:
*Pumpkin pie spice is a combination of ground cinnamon, nutmeg, ginger, cloves, and allspice (mixed spice) just incase you don’t have it premade from the store.
*This recipe can be made keto friendly by using stevia as a sweetener.
*If the batter is too thin, add more coconut flour. If too thick, add some extra liquid like nut milk.
*Using a natural sweetener like maple syrup contains nutrients, antioxidants and minerals and may lower inflammation. It’s a much healthier solution than using regular cane sugar.
*Please keep in mind that coconut flour is not a 1:1 swap with other flours. It is like a sponge and absorbs liquids differently than others. If you choose to substitute with almond flour, double the amount. Sometimes you have to play with the amount until you reach a desired consistency.
